2 tablespoons coconut oil
1 onion, chopped
2 garlic cloves, minced
2 tsp turmeric powder
½ tsp cumin powder
½ tsp cinnamon powder
½ tsp nutmeg powder (optional)
½ tsp black pepper
3 cups unsweetened pumpkin puree
3 cups low-sodium vegetable broth
1 cup unsweetened coconut milk
¼ teaspoon Himalayan salt
¼ teaspoon freshly ground black pepper
Fresh parsley or basil for garnish
1 tablespoon raw pumpkin seeds
Instructions:
Heat the coconut oil in a large pot over medium heat. Add the onion and garlic and cook until the onion is soft and translucent.
Add the turmeric, cumin, cinnamon, nutmeg, and black pepper and stir to combine. Cook for about 1 minute, until fragrant.
Add the pumpkin puree and vegetable broth and bring to a boil. Reduce heat and simmer for 15-20 minutes.
